Stollen is prepared a few weeks before Christmas. Mukka should rest and bring out the flavor. You don't always want to wait that long, so I share a simple and very tasty cupcake. Since the cake is prepared using cottage cheese, you should pay attention to its moisture. Very wet cottage cheese should be placed in a sieve and allowed to drain and only then use it in the dough. Very wet cottage cheese can affect the texture of baked goods. This is an important nuance, take into account it!

How to make

1. Prepare the necessary ingredients.

2. In a bowl, mix egg, cottage cheese, sugar. Blend with a blender until smooth.

3. Add the soft butter, cardamom, orange zest, lemon juice. Mash again with a blender.

4. Add 160 grams of flour and baking powder. Start stirring with a spoon.

5. While stirring, add the dried fruit and nut mixture. Add the remaining flour. Knead by hand.

6. Since the moisture content of cottage cheese varies, more flour may be needed. The finished dough should be soft and slightly stick to your hands. Sprinkle the dough with flour, round it, wrap it in a bag and put it in the refrigerator for 30 minutes.

7. After the time has elapsed, remove the dough from the refrigerator. Roll out the dough to a thickness of 0.5 cm on a floured work surface.

10. Place the cake mass in a baking dish. Put in an oven preheated to 180 degrees for 40-45 minutes.
